  • 2 Pandan Leaves (cut into small pieces)
  • 1 Green Chilli (chopped roughly)
  • 12 cloves Garlic (left whole with peel on)
  • 2 inch Ginger (sliced)
  • 1 tsp Whole Black Pepper
  • 1 tsp Cumin Seeds
  • 1 tbsp Fennel Seeds
  • 1 tbsp Red Chilli Flakes
  • Salt to taste

Instructions

  1. Step 1: In a bowl, combine the chicken with salt, lemon juice, red chilli powder, turmeric powder, and garam masala powder. Mix well and set aside to marinate for 1 hour.
  2. Step 2: While the chicken marinates, prepare the vizhinjam masala. Crush whole black pepper, fennel seeds, and cumin seeds coarsely using a blender or mortar and pestle.
  3. Step 3: Add the shallots, coriander leaves, mint leaves, curry leaves, pandan leaves, green chilli, garlic cloves, ginger slices, red chilli flakes, and salt to the crushed spices. Grind the mixture coarsely without adding water.
  4. Step 4: Coat the marinated chicken thoroughly with the freshly ground masala, ensuring the spices adhere well to each piece.
  5. Step 5: Heat coconut oil in a deep pan for frying. Once hot, add the coated chicken pieces along with any remaining masala. Fry on medium-high heat for 8 to 10 minutes, or until the chicken is cooked through and the coating is crispy and golden.
