Apple Filling
- 5 medium Granny Smith apples, peeled, cored, and finely diced (about 3½ cups)
- ¼ cup (50 g) light brown sugar, packed
- 1 teaspoon ground cinnamon
- ½ teaspoon cornstarch
Other Ingredients
- 22–24 egg roll wrappers
- 8 ounces cream cheese, room temperature (about 2 teaspoons per egg roll)
- Cooking oil or cooking spray
Topping & Dipping
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- ½ cup caramel topping, warmed, for dipping
- Preheat Oven: Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper and set aside.
- Prepare Apple Mixture: In a medium bowl, combine the diced apples, brown sugar, ground cinnamon, and cornstarch. Mix well to coat the apples evenly. Set aside.
- Prepare Egg Roll Wrappers: Lay out the egg roll wrappers on a clean work surface, working with one at a time to prevent drying out.
- Add Cream Cheese and Apple Filling: Spread about 2 teaspoons of room temperature cream cheese onto the center of each wrapper. Top the cream cheese with approximately 2 tablespoons of the apple mixture.
- Moisten Edges: Use a small amount of water to lightly wet the edges of the wrapper to help seal it during rolling.
- Fold and Roll: Fold the bottom corner of the wrapper up over the filling, then roll once to encase the mixture. Fold in the left and right corners towards the center to form an envelope shape, pressing gently to seal. Continue rolling the wrapper upward until fully enclosed, pressing edges firmly to seal completely.
- Place on Baking Sheet and Oil: Arrange the rolled egg rolls on the prepared baking sheet. Lightly brush or spray each egg roll with cooking oil or cooking spray for crispiness.
- Bake: Bake in the preheated oven for 15-17 minutes, flipping the egg rolls halfway through to ensure even browning. Bake until golden and crispy.
- Prepare Cinnamon Sugar Topping: While the egg rolls bake, mix the granulated sugar and 1 teaspoon ground cinnamon in a shallow dish.
- Coat Baked Egg Rolls: Once baked, immediately roll the hot egg rolls in the cinnamon sugar mixture until fully coated.
- Serve: Serve the cinnamon sugar coated egg rolls warm with warmed caramel topping on the side for dipping or drizzling.
Notes
- For best results, use crisp Granny Smith apples as they hold their shape well and provide a tart contrast to the sweet sugar coating.
- If you prefer, you can lightly fry the egg rolls instead of baking, but baking provides a healthier option.
- Ensure cream cheese is softened to room temperature for easy spreading.
- Handle egg roll wrappers carefully as they dry out quickly; keep covered with a damp towel if working in batches.
- These egg rolls can be enjoyed warm or at room temperature, but are best served fresh.
