This simple and delicious recipe features tender baby potatoes cooked to perfection and tossed in rich butter with a fresh blend of dill, chives, and parsley. The potatoes are gently boiled and steamed dry to ensure a perfect buttery coating, making them an ideal side dish for any meal.

Ingredients

Scale

Potatoes

  • 1 kg (2 lb) baby potatoes / new potatoes, about 3cm (1.2″) round, ideally uniform in size
  • 1 tbsp salt (for cooking)

Butter & Seasoning

  • 30g (2 tbsp) unsalted butter (no need to melt)
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Fresh Herbs

  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp chives, finely chopped
  • 1 tbsp parsley, finely chopped

Instructions

  1. Boil potatoes: Place the baby potatoes into a large pot filled with cold tap water and add 1 tablespoon of salt. Bring the water to a boil over high heat, then reduce the heat to medium to maintain a gentle simmer. This technique prevents the skins from splitting. Cook the potatoes for 10 to 15 minutes, or until a knife can be easily inserted with no resistance. Alternatively, you may choose to steam the potatoes instead.
  2. Steam dry: Drain the cooked potatoes in a colander, then let them sit for about a minute to steam dry. This step is essential because excess moisture will prevent the butter from adhering properly to the potatoes.
  3. Toss with butter: Transfer the steam-dried potatoes to a large bowl. Add the unsalted butter along with 1/2 teaspoon each of salt and pepper. Toss gently to allow the butter to melt and coat each potato evenly.
  4. Add fresh herbs and serve: Just before serving, stir in the finely chopped fresh dill, chives, and parsley. Transfer the potatoes to a serving bowl and enjoy them warm as a flavorful and comforting side dish.

Notes

  • Using baby potatoes of similar size ensures even cooking.
  • Steaming the potatoes dry after boiling is crucial for the butter to stick well.
  • Fresh herbs can be adjusted or substituted according to taste.
  • This dish is best served immediately while warm for optimal flavor.
