Donut Batter
- 1/4 cup melted regular or vegan butter
- 1 1/4 cup regular milk, oat milk, or almond milk
- 1 cup sugar
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- 2 cup regular or gluten free all purpose flour
- 1 cup fresh or frozen blueberries
Glaze (optional)
- 1/2 cup powdered sugar
- 1 tbsp regular milk, oat milk, or almond milk
- 1 tsp vanilla extract
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking when your batter is prepared.
- Prepare Batter: In a large mixing bowl, combine the melted butter (or vegan butter), milk of choice (regular, oat, or almond), baking soda, baking powder, sugar, and vanilla extract. Mix together until well combined.
- Add Flour: Gradually add the regular or gluten free all-purpose flour to the wet ingredients, gently mixing until just combined to avoid overmixing which can make the donuts tough.
- Fold in Blueberries: Gently fold in the fresh or frozen blueberries to the batter, distributing them evenly without breaking them up.
- Fill Donut Molds: Lightly grease 14-16 donut molds and carefully pour the batter into the molds. Be careful not to overfill each mold to allow room for the donuts to rise.
- Bake: Place the molds in the preheated oven and bake for about 20 minutes, or until the donuts are golden and a toothpick inserted comes out clean.
- Optional Glaze: If desired, prepare the glaze by mixing powdered sugar with 1 tablespoon of milk and 1 teaspoon of vanilla until smooth. Once donuts have cooled, drizzle or dip the tops in the glaze.
- Serve: Serve the donuts warm or at room temperature. They are delicious on their own or with the glaze.
Notes
- Use fresh blueberries for best texture, or frozen blueberries without thawing to avoid bleeding too much color into the batter.
- Do not overmix the batter once flour is added to keep donuts light and fluffy.
- Greasing the donut molds well prevents sticking and ensures easy removal.
- Glaze is optional and not included in nutritional calculations.
- Can be made vegan by using vegan butter and plant-based milk.
- For gluten free version, use gluten free all-purpose flour blend.
