These Baked Blueberry Donuts are a delicious, moist treat made with a light batter full of fresh or frozen blueberries. They are baked—not fried—for a healthier alternative to traditional donuts. Perfect for breakfast or a snack, these donuts can be made with regular or plant-based ingredients to suit dairy-free or vegan diets.

Ingredients

Scale

Donut Batter

  • 1/4 cup melted regular or vegan butter
  • 1 1/4 cup regular milk, oat milk, or almond milk
  • 1 cup sugar
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 2 cup regular or gluten free all purpose flour
  • 1 cup fresh or frozen blueberries

Glaze (optional)

  • 1/2 cup powdered sugar
  • 1 tbsp regular milk, oat milk, or almond milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking when your batter is prepared.
  2. Prepare Batter: In a large mixing bowl, combine the melted butter (or vegan butter), milk of choice (regular, oat, or almond), baking soda, baking powder, sugar, and vanilla extract. Mix together until well combined.
  3. Add Flour: Gradually add the regular or gluten free all-purpose flour to the wet ingredients, gently mixing until just combined to avoid overmixing which can make the donuts tough.
  4. Fold in Blueberries: Gently fold in the fresh or frozen blueberries to the batter, distributing them evenly without breaking them up.
  5. Fill Donut Molds: Lightly grease 14-16 donut molds and carefully pour the batter into the molds. Be careful not to overfill each mold to allow room for the donuts to rise.
  6. Bake: Place the molds in the preheated oven and bake for about 20 minutes, or until the donuts are golden and a toothpick inserted comes out clean.
  7. Optional Glaze: If desired, prepare the glaze by mixing powdered sugar with 1 tablespoon of milk and 1 teaspoon of vanilla until smooth. Once donuts have cooled, drizzle or dip the tops in the glaze.
  8. Serve: Serve the donuts warm or at room temperature. They are delicious on their own or with the glaze.

Notes

  • Use fresh blueberries for best texture, or frozen blueberries without thawing to avoid bleeding too much color into the batter.
  • Do not overmix the batter once flour is added to keep donuts light and fluffy.
  • Greasing the donut molds well prevents sticking and ensures easy removal.
  • Glaze is optional and not included in nutritional calculations.
  • Can be made vegan by using vegan butter and plant-based milk.
  • For gluten free version, use gluten free all-purpose flour blend.
