Bread and Butter
- 2 slices sourdough bread
- 1 tablespoon butter (divided)
Eggs and Toppings
- 2 eggs
- 2 tablespoons Garlic & Herb Boursin cheese
- ½ cup arugula
- ¼ cup cherry tomatoes (quartered)
- Drizzle of balsamic glaze
- Salt and pepper (to taste)
- Prepare the skillet: Heat a skillet over medium to medium-high heat. Add ½ tablespoon of butter and spread it around the skillet until melted to ensure the bread toasts evenly without sticking.
- Toast the bread: Place the sourdough slices in the skillet and toast one side for 2-3 minutes until golden brown and crispy. Flip the bread and toast the other side for 1-2 minutes. Remove the toasted bread from the skillet and set aside.
- Cook the eggs: Reduce the heat to low, add the remaining ½ tablespoon of butter to the skillet. Crack the eggs into the skillet and cook to your desired doneness – whether sunny-side up, over-easy, or fully cooked.
- Assemble the toast: Spread 1 tablespoon of Garlic & Herb Boursin cheese evenly over the top side of each sourdough slice. Place the cooked eggs on top of the cheese spread.
- Add toppings: Layer the arugula and quartered cherry tomatoes over the eggs, then drizzle with balsamic glaze. Season with salt and pepper to taste.
- Serve: Serve the Boursin Egg Toast immediately while warm for the best flavor and texture experience.
Notes
- For extra crispiness, use a well-seasoned cast iron skillet for toasting the bread.
- You can customize the recipe by adding avocado slices, cooked bacon, or fresh herbs like chives or parsley.
- If you prefer, use a non-stick pan to prevent the eggs and bread from sticking.
- Use fresh balsamic glaze for a sweeter and richer drizzle, or substitute with balsamic reduction.
