Instructions

  1. Cook the pasta: In a large pot of boiling salted water, add the fusilli pasta and cook, stirring occasionally, until al dente according to the package directions. Reserve ½ cup of the pasta cooking water before draining the pasta.
  2. Prepare the cheese sauce: While the pasta cooks, in a large saucepan over medium-low heat, bring the evaporated milk to a gentle simmer. Add the two packages of Garlic & Herb Boursin cheese and cook, stirring continuously, until the cheese is melted completely and the mixture is well combined, about 3 minutes.
  3. Thicken the sauce: Continue to simmer the cheese sauce, stirring occasionally, until it slightly thickens and becomes glossy, about 2 to 3 more minutes. Season with ½ teaspoon kosher salt to enhance the flavor.
  4. Combine pasta and sauce: Add the drained pasta to the cheese sauce along with a splash of the reserved pasta water. Stir gently over medium-low heat, adding more pasta water as needed, until the sauce coats the pasta evenly. Taste and season with additional kosher salt if desired.
