Instructions

  1. Cook the bacon: Heat the grill to high and arrange eight rashers of streaky or back bacon on a foil-lined baking tray. Grill for 5-7 minutes until crisp. Afterward, turn off the grill but keep the tray inside to keep the bacon warm.
  2. Prepare the pancake batter: In a large bowl, mix 200g self-raising flour, 1 tsp baking powder, 1 tbsp golden caster sugar, and a pinch of salt. Create a well in the center and add 3 lightly beaten eggs, 25g melted butter, and 200ml milk. Whisk until smooth using a balloon or electric hand whisk, then pour the batter into a jug for easy pouring.
  3. Cook the pancakes: Heat a knob of butter and 1 tsp vegetable oil in a large non-stick frying pan over medium heat. When the butter is frothy, pour rounds of batter about 8cm wide into the pan, making sure not to crowd them as they spread. Cook for 1-2 minutes until bubbles appear and the surface starts to set. Flip carefully and cook the other side for about a minute. Transfer the cooked pancakes to the grill oven with the bacon to keep warm. Repeat until all batter is used.
  4. Assemble and serve: Arrange your chosen toppings—maple syrup, raspberries, sliced banana, berry compote, chocolate spread, blueberries, and mini marshmallows—on a serving board. Add the warm pancakes and bacon just before serving, allowing everyone to build their own perfect brunch plates. Replenish toppings as needed during the meal.
