Instructions

  1. Heat the oil: In a large Dutch oven, heat the olive oil over medium heat until shimmering.
  2. Sauté vegetables: Add diced onions, bell peppers, and tomatoes to the pot and cook over medium-high heat for 4 to 6 minutes until they begin to soften.
  3. Add aromatics and tomato paste: Stir in the minced garlic, fresh thyme, salt, pepper, and tomato paste; cook for another 2 minutes to develop flavors.
  4. Add broth and cabbage: Pour in the beef broth, then add the chopped cabbage to the pot, stirring to combine everything.
  5. Bring to boil and simmer: Increase heat to bring the soup to a boil, then reduce heat to low and let it simmer gently for 15 to 20 minutes until the cabbage is tender.
  6. Serve: Ladle the hot soup into bowls and enjoy immediately.
