Campfire Banana Boats are a fun and delicious outdoor dessert perfect for camping or BBQ nights. Ripe bananas are sliced and stuffed with a variety of sweet toppings like chocolate chips, mini marshmallows, peanut butter, and chopped candy bars, then wrapped in foil and cooked over warm coals until gooey and melty. They offer a warm, comforting treat that’s easy to customize and share around the campfire.

Ingredients

Scale

Fruits

  • 1 ripe banana

Toppings

  • Handful of semi-sweet chocolate chips
  • Handful of mini marshmallows
  • Peanut butter (to taste)
  • Biscoff spread (to taste)
  • Cut up candy bars (as desired)
  • Chopped nuts (optional)
  • Honey Grahams or Cinnamon Toast Crunch cereal (optional)
  • Graham crackers (for dipping)

Wrapping

  • Aluminum foil (approximately 12-inch squares)
  • Parchment paper (slightly smaller squares than foil)

Instructions

  1. Prepare Bananas: Gather the bananas you wish to cook, slicing each banana lengthwise about ¼ inch deep down the middle without cutting all the way through. Gently pull the peel back slightly to create a space between the peel and the banana flesh.
  2. Stuff the Bananas: Fill the sliced section with your choice of toppings. A popular combination includes semi-sweet and dark chocolate chips along with mini marshmallows. Feel free to add peanut butter, Biscoff spread, chopped candy bars, nuts, or cereal for extra flavor and texture.
  3. Wrap the Bananas: Place each stuffed banana on a 12-inch square of aluminum foil with a slightly smaller piece of parchment paper on top. Wrap the banana securely, crimping the top to create a pouch but leaving a little space inside for steam and expansion.
  4. Cook Over Coals: Position the wrapped bananas directly onto warm campfire coals or BBQ coals without active flames. Allow them to cook for approximately 5 minutes to melt the fillings and soften the banana.
  5. Serve and Enjoy: Carefully remove the foil packets using tongs. The banana boats can be eaten straight from the peel or scooped into a bowl. Serve with graham crackers for dipping if desired.

Notes

  • Use ripe but firm bananas for best results to prevent mushiness during cooking.
  • Monitor the heat; cooking over hot coals without flames prevents burning and ensures even melting.
  • Customize toppings based on preferences or dietary needs; try adding peanut butter for protein or chopped nuts for crunch.
  • Serve immediately after cooking for the best gooey texture.
  • Foil packets can also be cooked on a grill or in an oven set to 375°F for 10–12 minutes if campfire cooking is not available.
