  • 8 Ounces sliced mushrooms
  • 2 Cloves garlic, minced
  • 1 Tablespoon minced fresh thyme

Dairy and Pasta

  • 4 Tablespoons butter, divided
  • 12 Ounces Bob Evans Six Cheese Pasta

Instructions

  1. Preheat Oven: Preheat your oven to 400°F to prepare for baking the pasta dish later.
  2. Caramelize Onions: Melt 2 tablespoons of butter in a large skillet over medium heat. Add the thinly sliced onions, cover, and cook for 15 minutes until they’re browned and tender. Then uncover, increase heat to medium-high, and cook while stirring constantly until the onions become golden brown. Remove from skillet and set aside.
  3. Cook Mushrooms and Garlic: In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the sliced mushrooms and minced garlic, cooking while stirring occasionally until the mushrooms are browned and tender.
  4. Mix Pasta and Vegetables: Place the six cheese pasta into a bowl. Stir in the caramelized onions, mushroom mixture, and minced fresh thyme until well blended.
  5. Prepare Baking Dish: Lightly grease a 1½-quart baking dish. Spoon the pasta mixture evenly into the dish.
  6. Bake the Pasta: Bake the prepared pasta dish in the preheated oven for 25 to 30 minutes or until it is hot and bubbly.
  7. Serve and Enjoy: Remove from the oven and serve warm for a delicious, cheesy, and flavorful meal.

Notes

  • Bob Evans Six Cheese Pasta is pre-cooked pasta in a creamy cheese sauce, making this dish quick and easy.
  • You can substitute other types of cheese pasta or cook your own pasta and add cheese sauce if preferred.
  • Fresh thyme adds a lovely herbal aroma, but you can substitute with dried thyme (use 1 teaspoon) if fresh is unavailable.
  • For a vegan version, substitute butter with plant-based margarine and use vegan cheese pasta alternatives.
  • Make sure not to overcook the onions initially; they should be tender before caramelizing further to golden brown.
  • Use a baking dish close to 1½-quart size to ensure even cooking and proper texture.
