Main Ingredients
- 1/2 cup butter
- 4 cups rotisserie chicken meat, shredded
- 1 (15 ounce) bag frozen mixed vegetables
- 1 (11.36 ounce) package Cheddar Bay biscuit mix (such as Red Lobster Cheddar Bay Biscuit Mix)
- 2 cups milk
- 1 (10.5 ounce) can cream of chicken soup
- 2 cups chicken stock
- 2 tablespoons fresh chopped parsley (optional)
- Preheat Oven and Melt Butter: Preheat your oven to 375 degrees F (190 degrees C). Place 1/2 cup of butter in the bottom of a 9×13-inch baking dish and put it in the oven until the butter melts completely.
- Layer Chicken and Vegetables: Once the butter is melted, evenly spread 4 cups of shredded rotisserie chicken over the butter in a single layer. Next, add the 15-ounce bag of frozen mixed vegetables over the chicken.
- Prepare Biscuit Mixture: In a bowl, stir together the Cheddar Bay biscuit mix along with its seasoning packet and 2 cups of milk until the mixture is well blended.
- Add Biscuit Mixture Over Chicken and Veggies: Pour the biscuit mixture gently over the chicken and vegetables in the baking dish. Spread the mixture lightly and evenly over the top but do not stir it into the ingredients beneath.
- Mix Soup and Stock: In a separate bowl, whisk together the 10.5-ounce can of cream of chicken soup and 2 cups of chicken stock until smooth.
- Pour Soup Mixture Over Biscuit Topping: Pour the soup and stock mixture evenly over the biscuit mixture layer, again without stirring.
- Bake the Cobbler: Bake uncovered in the preheated oven for about 45 minutes, or until the biscuit topping is very golden brown and only slightly jiggly in the center.
- Garnish and Rest: Remove from the oven, sprinkle chopped fresh parsley over the top if using, and let the cobbler stand for 10 minutes before serving to allow it to set.
Notes
- Use rotisserie chicken for convenience and flavor, but any cooked shredded chicken will work.
- Do not stir the layers after adding the biscuit and soup mixtures to maintain the cobbler structure.
- Frozen mixed vegetables can be substituted with fresh vegetables if preferred; adjust cooking time as needed.
- Letting the cobbler rest after baking helps it firm up for easier serving.
- Fresh parsley adds a bright, fresh finish but is optional.
