  • 2 tbsp coconut oil (omit if using runny peanut butter)
  • 60ml maple syrup
  • 80g cornflakes or crunchy cereal of choice
  • Pinch of salt

  • 150g dark chocolate
  • 1 tsp coconut oil

Instructions

  1. Combine Ingredients: Add the smooth peanut butter, coconut oil (if using), maple syrup, and a pinch of salt into a saucepan. Heat gently over low flame, stirring occasionally until all ingredients have softened and blended into a smooth mixture.
  2. Fold in Cornflakes: Remove the saucepan from heat and carefully fold in the cornflakes until they are evenly coated with the peanut butter mixture, ensuring all the flakes are covered for proper crunch.
  3. Shape the Bites: Spoon the mixture into your chosen moulds, such as small round silicone moulds, or press the mixture evenly into a loaf tin lined with baking paper if you want bars instead of bites.
  4. Freeze to Set: Place the moulds or loaf tin into the freezer and chill for at least 2 hours, or until the bites/bars are fully set and firm to the touch.
  5. Prepare Chocolate Coating: Break the dark chocolate into a heatproof bowl, add the coconut oil, then melt using short bursts in the microwave (checking every 10 seconds to prevent burning) or gently melt over a double boiler until smooth.
  6. Dip and Coat: Remove the set bites or bars from their moulds or tin carefully. Dip each bite or bar into the melted chocolate until fully coated, then place onto a baking paper-lined tray to set.
  7. Chill to Harden Chocolate: Transfer the chocolate-coated bites to the refrigerator and chill until the chocolate has hardened completely.
  8. Store Properly: Keep the finished cornflake bites in an airtight container in the freezer. Before serving, remove from the freezer and allow to sit for about 20 minutes to soften slightly for best texture.

Notes

  • If using runny peanut butter, you can omit adding coconut oil as the peanut butter will already be smooth enough to mix.
  • Maple syrup can be substituted with other liquid sweeteners such as honey or agave nectar, or a sugar-free liquid sweetener for a lower sugar version.
  • Any crunchy cereal or cornflakes will work well for this recipe, so feel free to swap based on preference or availability.
