Ingredients

Scale

Cake

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup whole milk
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp salt

Toffee Crunch Topping

  • 1 cup toffee bits

Chocolate Topping

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream

Cream Topping

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Cake Batter: In a large mixing bowl, cream the softened butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture alternately with the milk, beginning and ending with the flour mixture. Mix until just combined.
  2. Bake the Cake: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. Pour the batter into the pan and smooth the top. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cake cool completely on a wire rack.
  3. Make the Chocolate Ganache: In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and pour over the semi-sweet chocolate chips in a heatproof bowl. Let sit for 5 minutes, then stir until smooth and glossy. Allow to cool slightly before using.
  4. Whip the Cream: In a chilled bowl, whip the heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form. Keep refrigerated until ready to assemble.
  5. Assemble the Cake: Once the cake has cooled, spread the chocolate ganache evenly over the top. Immediately sprinkle the toffee bits on top of the ganache so they adhere. Finally, pipe or spread the whipped cream on top of the toffee layer as a finishing touch.
  6. Serve: Chill the cake for at least 30 minutes before serving to allow the topping to set. Slice and enjoy your festive Christmas Toffee Crunch Cake!

Notes

  • For extra crunch, you can lightly toast the toffee bits before sprinkling.
  • Use high-quality chocolate for a richer ganache flavor.
  • This cake can be made a day in advance and stored covered in the refrigerator.
  • To make the whipped cream topping sweeter, adjust powdered sugar to taste.
  • Ensure the cake is completely cooled before applying the ganache to prevent melting.
