Ingredients

Scale

Main Ingredients

  • 1 loaf bread, cut into bite sized chunks (preferably slightly stale or toasted)
  • 4 large eggs
  • 3/4 cup whole milk
  • 1 tsp vanilla extract
  • 2 Tbsp butter, divided
  • 3/4 cup sugar
  • 2 tsp cinnamon, divided
  • Pinch of kosher salt
  • 3/4 cup maple syrup
  • 1 cinnamon stick or 1 tsp cinnamon

Glaze

  • 1 cup powdered sugar
  • 2 Tbsp water
  • 1 tsp vanilla extract

Instructions

  1. Preheat and Toast Bread: Heat your oven to 350°F (175°C). If your bread is fresh, cut it into bite-sized chunks and place them on a baking sheet. Toast in the oven for 5-8 minutes until slightly dried and crisp but not browned. Skip this if the bread is already stale.
  2. Prepare Egg Mixture: In a large bowl, whisk together 4 eggs, 3/4 cup whole milk, 1 teaspoon vanilla extract, 2 teaspoons cinnamon, and a pinch of kosher salt until well combined.
  3. Coat Bread Chunks: Add half of the toasted bread cubes to the egg mixture, stirring gently to coat without saturating. Remove the coated bread and place in a separate bowl. Repeat with the remaining bread cubes.
  4. Cook Bread Bites: Heat a 10 to 12 inch pan over medium heat and melt 1 tablespoon of butter. Cook the bread cubes in batches without crowding the pan, about 2-3 minutes per side, until golden and toasted. You can toss them gently in the pan for even cooking. Remove cooked bites and repeat with remaining butter and bread.
  5. Prepare Cinnamon Sugar: In a bowl, combine 3/4 cup sugar with 1 teaspoon cinnamon and mix well.
  6. Coat Toasted Bread in Cinnamon Sugar: Add the cooked French toast bites in batches to the cinnamon sugar mixture, tossing to coat evenly. Arrange on a serving tray.
  7. Heat Maple Syrup: In a small saucepan over medium-low heat, warm 3/4 cup maple syrup along with 1 cinnamon stick or 1 teaspoon cinnamon. Stir occasionally and heat for about 5 minutes to infuse the cinnamon flavor.
  8. Make Vanilla Glaze: In a small bowl, whisk together 1 cup powdered sugar, 2 tablespoons water, and 1 teaspoon vanilla extract until smooth.
  9. Serve: Serve the cinnamon sugar coated French toast bites warmed with the cinnamon-infused maple syrup on the side for dipping and drizzle with the vanilla glaze if desired. Enjoy this fun and flavorful breakfast treat!

Notes

  • Use slightly stale bread or toast fresh bread first to prevent sogginess when soaked in the egg mixture.
  • If you prefer a richer texture, substitute whole milk with heavy cream.
  • The vanilla glaze can be used as an alternative or addition to maple syrup for extra sweetness.
  • For a crispier bite, make sure not to overcrowd the pan when cooking the bread cubes.
