Dry Ingredients
- 1 ½ cups rolled oats (slow or quick cook – gluten free if needed)
- 2 tbsp chia seeds
- 3 tbsp vegan chocolate chips (or cacao nibs)
- 1 scoop your favourite vegan protein powder
Wet Ingredients
- 2 tbsp peanut or almond butter
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 2 cups dairy free milk
- Mix dry ingredients: In a large bowl, combine the rolled oats, chia seeds, vegan chocolate chips, and vegan protein powder. Stir well to evenly distribute the ingredients.
- Add wet ingredients: Pour in the peanut or almond butter, maple syrup, vanilla extract, and dairy free milk into the dry mixture. Mix thoroughly until all ingredients are well combined and have a creamy consistency.
- Portion and cover: Divide the mixture evenly into bowls or airtight storage containers. Cover them tightly to keep fresh.
- Refrigerate: Place the containers in the fridge for at least 4 hours or preferably overnight. This allows the oats and chia seeds to absorb the liquid and soften.
- Serve and enjoy: Remove from the fridge and enjoy your cookie dough overnight oats cold, or warm them slightly if preferred. Add additional toppings if desired.
Notes
- You can substitute the peanut or almond butter with any nut butter of your choice.
- Maple syrup can be adjusted based on your preferred sweetness level or replaced with agave nectar or honey (if not vegan).
- For a thicker consistency, reduce the amount of dairy free milk or add more chia seeds.
- This recipe is vegan and gluten free if using certified gluten free oats.
- Store leftover oats in the fridge for up to 3 days.
