Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts

Sauté Base

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped

Vegetables

  • 8 oz mushrooms, sliced
  • 4 cups fresh spinach, chopped

Sauce

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s hot and ready for baking the chicken casserole.
  2. Sauté Garlic and Onions: Heat olive oil in a large skillet over medium heat. Add the minced garlic and finely chopped onions. Cook until fragrant and translucent, about 3-5 minutes, stirring occasionally to prevent burning.
  3. Add Mushrooms: Add the sliced mushrooms to the skillet and sauté until they soften and release their moisture, which should take around 5-7 minutes.
  4. Cook Spinach and Season: Stir in the chopped fresh spinach and cook until just wilted, about 2-3 minutes. Season the mixture with salt, pepper, dried thyme, and paprika to enhance the flavors.
  5. Assemble Bake: In a baking dish, arrange the chicken breasts evenly. Pour the creamy spinach and mushroom mixture over the chicken breasts, making sure they are well covered.
  6. Add Parmesan Topping: Sprinkle the grated Parmesan cheese evenly over the top of the chicken and vegetable mixture to create a flavorful crust once baked.
  7. Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the chicken is fully cooked through (internal temperature should reach 165°F/74°C), and the cheese is golden brown and bubbly.

Notes

  • For a lighter option, substitute heavy cream with half-and-half or whole milk, though the sauce will be less rich.
  • Ensure chicken breasts are of even thickness to promote uniform cooking; pound if necessary.
  • Fresh Parmesan cheese works best for melting and flavor, but pre-grated is acceptable.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Adding a pinch of red pepper flakes to the sauté base can give a subtle spicy kick if desired.
