Chicken and Seasoning
- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts

Vegetables and Sauce
- 8 ounces cremini or white mushrooms, sliced
- 2 cups fresh baby spinach
- 1/2 cup cherry tomatoes, halved
- 1/4 cup capers, drained
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
Garnish
- 1 tablespoon fresh parsley, chopped

- Prepare Your Skillet: Start by heating the olive oil in a large skillet over medium-high heat. This will create the perfect base for your chicken to cook.
- Season the Chicken: Sprinkle salt, freshly ground black pepper, and dried oregano on both sides of the chicken breasts. This will make them flavorful and delicious!
- Cook the Chicken: Add the seasoned chicken to the skillet. Cook for about 5-7 minutes on each side, or until they are golden brown and cooked through. The chicken should reach an internal temperature of 165°F. Once done, remove from the skillet and set aside on a plate.

- Return the Chicken: Place the cooked chicken back into the skillet, spooning some of that creamy sauce over the top. Warm the chicken through for about 2 minutes.
- Garnish and Serve: Finally, garnish your dish with fresh parsley and a pinch of crushed red pepper flakes if desired. Serve warm, spooning the delicious sauce and veggies over the chicken.
