  • 200 ml water (for rinsing blender)

Pasta & Garnishes

  • 200 g spaghetti
  • 1 tbsp grated parmesan (plus more for garnish)
  • 1 tsp chilli flakes (1/2 tsp for each bowl)

Instructions

  1. Sauté Aromatics: Place a deep frying pan with a lid over medium heat and add 1 tablespoon of vegetable oil. When hot, add the finely chopped garlic and diced white onion. Sauté for a few minutes until softened, then stir in the paprika, dried oregano, salt, and pepper. Continue frying for another few minutes until the onion is tender and fragrant.
  2. Prepare Sauce: While the aromatics cook, combine the sun-dried tomatoes, sun-dried tomato oil, and chicken or vegetable stock in a blender. Blend until completely smooth. Pour this blended mixture into the frying pan with the aromatics. Add the cream along with 200 ml water used to rinse out the blender. Stir everything together to combine thoroughly.
  3. Cook Pasta in Sauce: Add the spaghetti directly into the pan and cover with the lid. Let it cook on low to medium heat following the pasta’s package instructions (approximately 8-10 minutes). Every 2-3 minutes, lift the lid and stir to prevent sticking and ensure even cooking. If the pasta starts sticking to the pan, reduce the heat or add a bit more water as needed.
  4. Finish the Dish: Once the spaghetti is cooked and sauce is rich and creamy, check consistency. If sauce is insufficient, add a splash of water and stir well. Grate in 1 tablespoon of Parmesan cheese and combine thoroughly. Divide the pasta between two plates, and garnish with additional grated Parmesan, chili flakes (1/2 tsp per serving), salt, and black pepper to taste. Serve immediately and enjoy!
