Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prepare for roasting.
  2. Boil Carrots: Boil the carrot rounds in salted water for 10 to 12 minutes or until they are fork-tender. Drain them and let cool slightly so they are easier to handle.
  3. Smashed Carrots: Arrange the boiled carrots on the prepared baking sheet. Using the bottom of a glass or measuring cup, gently press down on each carrot round to flatten slightly, creating a smashed effect.
  4. Season: Drizzle the smashed carrots with olive oil, then evenly sprinkle with garlic powder, smoked paprika, salt, and pepper. Finally, add the grated Parmesan cheese over the top.
  5. Roast: Roast the carrots in the preheated oven for 20 to 25 minutes, flipping them halfway through cooking. Roast until the edges become golden and crispy.
  6. Garnish and Serve: Remove from oven, garnish with chopped fresh parsley, and serve the crispy smashed carrots hot for best flavor and texture.
