Ingredients

  • 1-2 Tablespoons vegetable oil
  • Salt and pepper, to taste
  • 1.5 pounds boneless, skinless chicken breasts (about 2 large breasts)
  • 4 ounces (½ block) cream cheese, softened to room temperature
  • 3 Tablespoons unsalted butter, softened to room temperature
  • 10.5 ounce can cream of chicken soup (low or no sodium recommended if sensitive to salt)
  • 3 cloves garlic, minced
  • ¾ cup chicken broth (low or no sodium recommended if sensitive to salt)
  • 1 (0.7 ounce) packet Good Seasons Dry Italian Salad Dressing Mix (or your favorite mix)
  • 16 ounce box angel hair pasta
  • Chopped fresh parsley, cracked pepper, and/or grated Parmesan cheese (optional for serving)

Instructions

  1. Step 1: Heat a cast iron skillet over medium-high heat. Add 1-2 tablespoons vegetable oil and swirl to coat the pan. Season both sides of the chicken breasts with salt and pepper.
  2. Step 2: When the pan is hot, sear the chicken breasts for 2-3 minutes on each side until golden brown. Remove from heat.
  3. Step 3: In a medium bowl, whisk together softened cream cheese and butter until smooth.
  4. Step 4: Add cream of chicken soup, minced garlic, chicken broth, and Italian salad dressing mix to the bowl. Whisk to combine fully.
  5. Step 5: Spray the inside of a crock pot with non-stick cooking spray. Place the seared chicken breasts in the bottom of the crock pot.
  6. Step 6: Pour the sauce mixture over the chicken. Cover and cook on low for 3-4 hours, or until the chicken reaches an internal temperature of 165°F. Cooking longer makes the chicken more tender but may cause it to fall apart.
  7. Step 7: Shortly before serving, cook the angel hair pasta according to package instructions until al dente. Drain and set aside.
  8. Step 8: Serve the chicken whole or shredded. Either toss the pasta directly in the sauce or spoon chicken and sauce over individual servings of pasta.
  9. Step 9: Optionally, top with chopped fresh parsley, cracked pepper, and grated Parmesan cheese for extra flavor.

Tips & Variations

  • For a lower sodium version, use low or no sodium chicken broth and cream of chicken soup.
  • Try mixing in your favorite Italian seasoning in place of the salad dressing mix if preferred.
  • Leftover chicken can be shredded and used in sandwiches or salads.
  • Adding a splash of white wine to the sauce can enhance the flavor.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a little broth if the sauce has thickened too much. Pasta is best cooked fresh, but you can refrigerate it separately and combine before serving.

How to Serve

A round white plate holds a bed of thin yellow spaghetti noodles as the base layer, topped with a creamy white sauce mixed into the noodles. On top of the noodles, there is a large piece of golden-brown grilled chicken breast covered with creamy sauce, sprinkled with black pepper and small green herb pieces. FAQs

Can I use other cuts of chicken?

Yes, boneless, skinless chicken thighs can be used for a richer flavor and more tender texture, but adjust cooking time as thighs may cook faster.

Can I prepare this recipe without a crock pot?

You can bake the chicken and sauce covered in a 350°F oven for about 45 minutes to 1 hour, or until the chicken reaches 165°F internally. Check periodically to avoid overcooking.

Pasta and Garnishes

  • 16 ounce box angel hair pasta
  • Chopped fresh parsley (optional for serving)
  • Cracked black pepper (optional for serving)
  • Grated Parmesan cheese (optional for serving)

Instructions

  1. Prepare and Season Chicken: Heat a cast iron skillet over medium-high heat. Add 1-2 tablespoons vegetable oil and swirl to coat the pan bottom. Season both sides of 1.5 pounds boneless, skinless chicken breasts with salt and pepper according to taste.
  2. Sear Chicken: Once the skillet is hot, add the chicken breasts and sear each side for 2-3 minutes until golden brown. Remove the chicken from heat and set aside.
  3. Make Creamy Sauce: In a medium bowl, whisk 4 ounces softened cream cheese with 3 tablespoons softened unsalted butter until smooth and creamy.
  4. Combine Soup and Seasonings: Add the 10.5 ounce can cream of chicken soup, minced garlic, ¾ cup chicken broth, and the packet of Italian salad dressing mix to the cream cheese mixture. Whisk thoroughly until all ingredients are fully incorporated.
  5. Prepare Crock Pot: Spray the inside of the crock pot with non-stick cooking spray. Place the seared chicken breasts in the bottom of the crock pot.
  6. Add Sauce and Cook: Pour the cream sauce mixture over the chicken breasts evenly. Cover and cook on low heat for 3-4 hours, or until the chicken reaches an internal temperature of 165°F. Cooking longer will make the chicken more tender and shred easily.
  7. Cook Pasta: Shortly before serving, cook the angel hair pasta according to the package instructions until al dente. Drain well.
  8. Serve: Serve the chicken breasts whole or shred the chicken with a fork. Either toss the pasta directly in the sauce or spoon the chicken and sauce over the pasta individually.

Notes

  • Use low or no sodium broth and soup options if you are sensitive to salt or watching your sodium intake.
  • Internal temperature of 165°F is the safest indicator for doneness when cooking chicken in a crock pot.
  • Angel hair pasta cooks very quickly; watch carefully to avoid overcooking.
  • Searing the chicken before crock pot cooking adds flavor and color, but can be skipped if short on time.
  • The longer the chicken cooks, the more it will tenderize and start to fall apart, perfect for shredding.
  • Non-stick spray helps prevent sticking inside the crock pot and makes clean-up easier.
