Chicken and Seasonings

  • 1.5 pounds boneless, skinless chicken breasts (about 2 large breasts)

Creamy Sauce Mixture

  • 4 ounces (½ block) cream cheese, softened to room temperature
  • 3 Tablespoons unsalted butter, softened to room temperature
  • 10.5 ounce can cream of chicken soup (low or no sodium recommended if sensitive to salt)
  • 3 cloves garlic, minced
  • ¾ cup chicken broth (low or no sodium recommended if sensitive to salt)
  • 1 (0.7 ounce) packet Good Seasons Dry Italian Salad Dressing Mix or your favorite Italian dressing mix

  • 16 ounce box angel hair pasta
  • Chopped fresh parsley (optional for serving)
  • Cracked black pepper (optional for serving)
  • Grated Parmesan cheese (optional for serving)

Instructions

  1. Prepare and Season Chicken: Heat a cast iron skillet over medium-high heat. Add 1-2 tablespoons vegetable oil and swirl to coat the pan bottom. Season both sides of 1.5 pounds boneless, skinless chicken breasts with salt and pepper according to taste.
  2. Sear Chicken: Once the skillet is hot, add the chicken breasts and sear each side for 2-3 minutes until golden brown. Remove the chicken from heat and set aside.
  3. Make Creamy Sauce: In a medium bowl, whisk 4 ounces softened cream cheese with 3 tablespoons softened unsalted butter until smooth and creamy.
  4. Combine Soup and Seasonings: Add the 10.5 ounce can cream of chicken soup, minced garlic, ¾ cup chicken broth, and the packet of Italian salad dressing mix to the cream cheese mixture. Whisk thoroughly until all ingredients are fully incorporated.
  5. Prepare Crock Pot: Spray the inside of the crock pot with non-stick cooking spray. Place the seared chicken breasts in the bottom of the crock pot.
  6. Add Sauce and Cook: Pour the cream sauce mixture over the chicken breasts evenly. Cover and cook on low heat for 3-4 hours, or until the chicken reaches an internal temperature of 165°F. Cooking longer will make the chicken more tender and shred easily.
  7. Cook Pasta: Shortly before serving, cook the angel hair pasta according to the package instructions until al dente. Drain well.
  8. Serve: Serve the chicken breasts whole or shred the chicken with a fork. Either toss the pasta directly in the sauce or spoon the chicken and sauce over the pasta individually.
  9. Optional Garnishes: Top with freshly chopped parsley, a sprinkle of cracked black pepper, and/or grated Parmesan cheese for added flavor and presentation.

  • Use low or no sodium broth and soup options if you are sensitive to salt or watching your sodium intake.
