Ingredients

Scale

Beef and Broth

  • 2 lbs beef stew meat or beef tips
  • 3 cups beef broth
  • 1 packet (1 oz) onion soup mix
  • 2 tbsp Worcestershire sauce

Vegetables and Flavoring

  • 1 medium onion, diced
  • 3 cloves garlic, minced

Other Ingredients

  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • 12 oz egg noodles
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Prepare the beef: Season the beef tips with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the beef tips until browned on all sides. This step helps to lock in flavor and develop a rich crust. Transfer the seared beef into the Crockpot.
  2. Sauté aromatics: In the same skillet, add the diced onion and minced garlic. Sauté until the onions become translucent and fragrant, about 3-4 minutes. Then, add these to the Crockpot on top of the beef.
  3. Combine liquids and thickeners: In a bowl, whisk together the beef broth, onion soup mix, Worcestershire sauce, and flour until well combined and smooth. Pour this mixture over the beef and onions in the Crockpot, ensuring the beef is well covered.
  4. Slow cook the beef: Cover the Crockpot and cook on low for 6–8 hours or on high for 3–4 hours until the beef is tender and the gravy has thickened.
  5. Cook the noodles: About 30 minutes before serving, bring a pot of salted water to boil and cook the egg noodles according to the package instructions until al dente. Drain the noodles and keep warm.
  6. Serve: Spoon the beef tips and rich onion gravy over the cooked egg noodles. Garnish with freshly chopped parsley if desired. Serve hot and enjoy your comforting meal.

Notes

  • For thicker gravy, you can mix an extra tablespoon of flour with water and stir it into the Crockpot 30 minutes before the end of cooking.
  • Feel free to add mushrooms or carrots to the sauté step for extra flavor and nutrition.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • If you prefer, you can substitute egg noodles with other pasta shapes such as fettuccine or pappardelle.
