Ingredients

Scale

Fruit Mixture

  • 1.5 cups fresh raspberries
  • 2 Tbsp chia seeds
  • ¼ cup maple syrup or honey

Chocolate Coating

  • ¾ cup dark chocolate, melted
  • Optional: 1 Tbsp coconut oil (for smoother chocolate)

Instructions

  1. Mash and Mix: In a large bowl or pan, mash the fresh raspberries thoroughly. Add the maple syrup or honey and chia seeds to the mashed raspberries. Mix well to combine all ingredients evenly. Let the mixture sit at room temperature for about 15 minutes to allow the chia seeds to absorb moisture and thicken the mixture.
  2. Form Bites: Using a spoon or an ice cream scoop, portion the raspberry mixture onto a parchment-covered baking sheet or plate, forming small, bite-sized mounds.
  3. Freeze Mixture: Place the tray with raspberry bites in the freezer for 20 minutes to firm up the bites, making them easier to dip in chocolate.
  4. Melt Chocolate: While the raspberry bites are freezing, melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring each time until completely smooth. Optionally, stir in 1 tablespoon of coconut oil for a smoother texture.
  5. Dip Bites in Chocolate: Remove the frozen raspberry bites from the freezer. Dip each bite thoroughly into the melted chocolate, ensuring both sides are coated evenly.
  6. Harden and Store: Place the chocolate-coated bites back onto the parchment paper. Return them to the freezer and allow the chocolate to harden completely. For best taste and texture, store the bites in the freezer and consume them directly from there.

Notes

  • Use fresh raspberries for the best flavor and texture, but frozen can be used if thawed and drained well.
  • Maple syrup and honey are interchangeable; choose based on dietary preference.
  • Chilling the raspberry mixture before dipping ensures the chocolate sets quickly and adheres well.
  • Store bites in the freezer to prevent melting and maintain freshness.
  • You can experiment with dark chocolate percentages; 70% cocoa works well for a rich taste.
  • For vegan option, use maple syrup and check that chocolate is dairy-free.
