  • 1 large carrot, sliced into 1-inch-thick pieces
  • 2 corn on the cob, chopped into 2-inch-thick pieces
  • 1 onion, roughly chopped
  • 2 medium yellow potatoes (or Yukon gold / white potatoes), quartered

Liquids and Seasoning

  • 10 cups water (cold or room temp)
  • 1/2 tsp chicken bouillon powder
  • 1 tsp salt (or add to taste)

Garnish

  • 1 green onion, finely chopped (optional garnish)

Instructions

  1. Blanch the Meat: Bring a large pot filled halfway with water to boil on medium-high heat. Add the chopped pork and boil for 3-5 minutes until the scum surfaces. This step helps remove impurities for a clearer broth.
  2. Clean the Meat and Pot: Discard the cloudy water, rinse the meat and pot thoroughly to remove any leftover scum or impurities. Then, add the cleaned meat back into the pot.
  3. Add Vegetables and Water: Add the carrots, tomatoes, potatoes, corn, onions, and 10 cups of cold or room temperature water to the pot, preparing for simmering.
  4. Cook the Soup: For stovetop cooking, cover the pot and bring to a boil on medium-high heat. Then reduce heat to low-medium and simmer gently for 1½ to 2 hours. Occasionally skim off any scum or fat from the surface to keep the broth clear. If using a pressure cooker, seal the lid and valve and cook on high pressure for 45 minutes, then allow natural pressure release for 20-30 minutes or quick release if in a hurry.
  5. Season and Skim: After cooking, skim off any remaining oil or scum from the soup surface. Season with chicken bouillon powder and salt to taste, adjusting flavors as needed.
  6. Serve and Garnish: Ladle the soup into bowls and garnish with finely chopped green onions if desired. Serve hot and enjoy this comforting classic soup.
