Instructions

  1. Prepare the Corn: If using fresh corn, carefully cut the kernels off the cob. For canned corn, drain thoroughly and rinse under cold water. If using frozen corn, thaw completely and drain any excess moisture to prevent the dip from becoming watery.
  2. Mix the Creamy Base: In a large mixing bowl, combine the sour cream, mayonnaise, and softened cream cheese. Stir vigorously until the mixture is smooth and creamy. If the cream cheese is too firm, use a hand mixer to blend it until fully smooth before adding the other ingredients.
  3. Add Cheeses and Spices: Stir in the shredded cheddar and pepper jack cheeses until evenly distributed. Then mix in the garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper to enhance the flavor profile.
  4. Incorporate Vegetables and Herbs: Fold in the corn kernels, chopped green onions, diced red bell pepper, and finely chopped jalapeño to add texture and a mild kick. If you like cilantro, add the chopped fresh cilantro at this point and gently mix it in to distribute evenly.
