Ingredients

Scale

Protein and Vegetables

  • 1 chicken breast
  • 2 garlic cloves, minced
  • 1/2 inch fresh ginger, minced
  • 2 pak choi, chopped in half lengthwise
  • 1/4 red onion, finely sliced

Noodles

  • 200g fresh ramen or egg noodles

Broth and Seasonings

  • 1 tablespoon sriracha
  • 1 tablespoon light soy sauce
  • 1/2 tablespoon sesame oil (optional)
  • 1/2 tablespoon sugar
  • 1 chicken stock cube (10g)
  • 300ml boiling water

Garnishes

  • 1 lime wedge
  • Fresh coriander, roughly chopped
  • Fresh red chillies, finely sliced

Instructions

  1. Cook the Chicken: Place a non-stick frying pan on medium heat and drizzle in some oil. Add the chicken breast and fry for 5 minutes on each side or until golden and cooked through.
  2. Sauté Aromatics and Pak Choi: Add minced garlic, ginger, and sliced pak choi halves to the pan. Cover with a lid and cook for a few minutes until the pak choi is al dente, adding a splash of water to create steam. Once cooked, turn off the heat and leave the lid on to keep warm.
  3. Prepare Garnishes: While the chicken and pak choi cook, prepare your garnishes including finely sliced red onion, chopped fresh coriander, and sliced fresh red chillies.
  4. Cook Noodles: Boil fresh ramen or egg noodles according to package instructions (usually 2-3 minutes). Drain and set aside.
  5. Make Broth: In your ramen bowl, combine sriracha, light soy sauce, sesame oil, sugar, and chicken stock cube. Mix well.
  6. Add Hot Water: Boil water using a kettle and pour 300ml boiling water into the bowl about 1 1/2 inches from the top. Stir thoroughly and season to taste.
  7. Slice Chicken: Slice the cooked chicken breast into thin strips.
  8. Assemble Ramen: Place cooked noodles into the broth bowl, then top with sliced chicken and pak choi.
  9. Add Garnishes and Serve: Top your ramen with red onions, fresh coriander, spring onion (optional), sliced red chillies, and a wedge of lime. Serve immediately and enjoy!

Notes

  • Use fresh ramen or egg noodles for best texture; dried noodles are a suitable alternative but may alter cooking time.
  • Adjust the amount of sriracha to control the spice level of the broth.
  • The sesame oil is optional but adds a nice nutty flavor to the broth.
  • You can substitute chicken stock cube with vegetable stock cube for a lighter flavor.
  • Ensure pak choi is cooked until just tender to retain its crunch and nutrients.
  • To save time, prepare garnishes while chicken and pak choi cook.
