Soup Base
- 1 lb ground pork
- 2 tablespoons sesame oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 cup shredded cabbage
- 1 cup shredded carrots
- 4 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon hoisin sauce
- 2 teaspoons sriracha (optional, for heat)
- Salt and pepper to taste
Toppings
- 2 green onions, chopped
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon toasted sesame seeds
- Crispy wonton strips for topping (optional)
- Heat Sesame Oil and Brown Pork: Heat sesame oil in a large pot over medium heat. Add ground pork and cook, breaking it up with a spoon, until browned and cooked through.
- Sauté Aromatics: Add diced onion, minced garlic, and grated ginger to the pot. Cook for 2-3 minutes until the onion softens and the mixture is fragrant.
- Cook Vegetables: Stir in shredded cabbage and carrots, cooking for an additional 3-4 minutes until vegetables are tender but still retain some crunch.
- Add Broth and Seasonings: Pour in chicken broth, soy sauce, rice vinegar, hoisin sauce, and sriracha if using. Stir to combine and bring the mixture to a boil.
- Simmer the Soup: Reduce heat to low and let the soup simmer for 10 minutes to meld all the flavors. Taste and season with salt and pepper as needed.
- Serve and Garnish: Ladle the soup into bowls and top with chopped green onions, fresh cilantro, toasted sesame seeds, and crispy wonton strips if desired for added texture and flavor.
Notes
- To make this soup vegetarian, substitute ground pork with firm tofu crumbles and use vegetable broth.
- Adjust the amount of sriracha based on your heat preference or omit for a milder flavor.
- Crispy wonton strips add a delightful crunch but can be skipped or replaced with crunchy baked tortilla strips.
- Leftovers store well in the refrigerator for up to 3 days; reheat gently before serving.
- For a gluten-free version, use tamari or gluten-free soy sauce and ensure hoisin sauce is gluten-free.
