Ingredients

Scale

Beef Stew

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 340 grams (3/4 pound) top sirloin, cut into cubes
  • Salt, to taste
  • Black pepper, to taste
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion, chopped
  • 2 medium carrots, peeled and chopped
  • 1 tablespoon all-purpose flour

Mashed Potatoes

  • 6 large potatoes, peeled
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 3 tablespoons chives, finely chopped
  • Salt, to taste

Instructions

  1. Preheat and Sear Beef: Preheat your oven to 375°F (190°C). In a large skillet over medium-high heat, warm the olive oil and butter. Season the cubed top sirloin with salt and black pepper, then add it to the hot pan. Sear the beef, turning occasionally, until all sides are browned, about 6–8 minutes.
  2. Sauté Vegetables: Add the chopped onion and peeled, chopped carrots to the skillet with the beef. Sauté them together until the onions become translucent and the carrots start to soften, roughly 4–5 minutes.
  3. Add Flour and Liquids: Sprinkle the flour evenly over the beef and vegetables, stirring well to coat everything. Cook this mixture for 1–2 minutes to remove the raw flour taste. Then pour in the apple cider and beef broth, scraping up any browned bits stuck to the pan to add flavor. Bring the mixture to a boil.
  4. Bake the Stew: Transfer the entire mixture into a covered oven-safe Dutch oven or casserole dish. Cover tightly with a lid or foil. Bake in the preheated oven for 60–90 minutes, until the beef is tender and the sauce has thickened to a rich stew consistency.
  5. Boil Potatoes: While the stew is baking, place the peeled potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender when pierced with a fork, about 20–25 minutes. Drain well and return the potatoes to the pot.
  6. Mash Potatoes: Mash the cooked potatoes with the milk, sour cream, shredded cheddar cheese, and chopped chives until smooth and creamy. Season with salt to taste and adjust seasoning as needed.
  7. Serve: Spoon a generous portion of the creamy mashed potatoes onto plates and top with the warm apple cider beef stew. Garnish with extra chopped chives if desired and serve immediately for a hearty, comforting meal.

Notes

  • Using a Dutch oven or heavy oven-safe casserole ensures even cooking and prevents drying out.
  • Adjust the consistency of the stew with additional beef broth if it thickens too much during baking.
  • For extra flavor, add a bay leaf or fresh thyme to the stew before baking, removing before serving.
  • Sharp cheddar in the mashed potatoes adds a rich depth, but you can substitute with your preferred cheese.
  • The apple cider adds a subtle sweetness; use fresh cider rather than processed for best results.
