Dry Ingredients
- 2 cups almond flour
- 1/3 cup granulated sweetener (such as Lakanto for sugar-free)
- 1 tbsp baking powder
- 2 tsp cinnamon (1 tsp can be reserved for swirl)
- 1/2 tsp salt
Wet Ingredients
- 2/3 cup yogurt (or coconut cream for dairy-free option)
- 3 eggs
- 2/3 cup diced apple
- 1.5 tbsp water (to mix with 1 tsp cinnamon for swirl)
- Prepare Cinnamon Swirl (Optional): Mix 1 teaspoon of cinnamon with 1 and a half tablespoons of water and set aside to swirl into the bread batter right before baking.
- Preheat and Prepare Pan: Preheat your oven to 325°F (163°C). Grease a 9×5 inch loaf pan or line it with parchment paper to prevent sticking.
- Combine Dry Ingredients: In a large bowl, stir together almond flour, granulated sweetener, baking powder, salt, and remaining cinnamon until well combined.
- Add Wet Ingredients: Add yogurt (or coconut cream) and eggs to the dry mixture. Stir everything until a smooth batter forms.
- Fold in Apples: Gently fold the diced apples into the batter, ensuring even distribution without overmixing.
- Incorporate Cinnamon Swirl: If using the cinnamon swirl, gently swirl the cinnamon-water mixture into the batter in the loaf pan to create a marbled effect.
- Bake the Bread: Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 55 minutes or until a toothpick inserted into the center comes out clean.
- Cool and Remove: Let the bread cool completely in the pan. Run a knife around the edges to loosen and carefully remove the loaf to avoid breaking the moist bread.
- Storage: Once cooled, you can loosely cover the bread and leave it out overnight. For longer storage, refrigerate for up to five days or slice and freeze.
Notes
- For a nut-free version, substitute almond flour with a recommended alternative (see recipe notes).
- Remember that the bread is very moist and soft, so handle gently when removing from the pan.
- You can adjust the sweetness using your preferred sweetener or adjust cinnamon quantity to taste.
- This bread can be enjoyed fresh, refrigerated, or frozen for longer shelf life.
