Meat and Seasoning
- 1 lb. ground beef
- ⅔ cup water
- 1 (1 oz.) packet taco seasoning or 2 Tbsp. homemade taco seasoning
Rice and Cheese
- 1 cup seasoned or yellow rice, prepared according to the package
- 1 cup shredded Cheddar cheese, plus extra for topping
- 1 cup queso
Sauces and Toppings
- ¼ cup chipotle sauce
- 1 cup sour cream
- Crisp red tortilla strips
Wrap
- Cook the Ground Beef: In a large skillet over medium-high heat, add the ground beef. Cook, stirring and breaking it up, until no longer pink, about 6-7 minutes. Drain any excess fat from the skillet.
- Simmer with Seasoning: Pour in the water and taco seasoning. Stir to combine and let the mixture simmer for 3-4 minutes until well incorporated. Remove from heat and set aside.
- Assemble the Burritos: Lay out the tortillas flat. Evenly layer on each: seasoned ground beef mixture, cooked seasoned or yellow rice, queso, shredded Cheddar cheese, chipotle sauce, sour cream, and crisp red tortilla strips.
- Preheat the Broiler: Set your oven broiler to high heat to prepare for melting the cheese.
- Roll and Broil the Burritos: Roll each tortilla tightly, folding the edges so the filling stays enclosed. Place the burritos seam-side down in an oven-safe skillet. Sprinkle extra shredded cheddar cheese on top of each burrito.
- Broil to Finish: Place the skillet under the broiler for 1-2 minutes until the cheese melts and bubbles. Watch carefully to prevent burning. Once melted and slightly crispy on top, remove from the oven and serve warm.

- You can substitute the ground beef with ground turkey or chicken for a leaner option.
- Adjust the amount of chipotle sauce and sour cream to your taste preference for spiciness and creaminess.
- Using crisp red tortilla strips adds a nice texture contrast, but they can be omitted or substituted with crushed tortilla chips.
- If you don’t have a broiler, you can melt the cheese in a 375°F (190°C) oven for 5-7 minutes instead.
- Leftover burritos can be refrigerated and reheated in the oven or microwave.
