Scale

Sauce Ingredients

  • 1/4 cup brown sugar
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon garlic powder
  • 2 tablespoons Mirin (Japanese sweet rice wine)
  • 2 tablespoons soy sauce
  • 2 teaspoons rice wine vinegar
  • 1/2 cup beef broth
  • 1 tablespoon cornstarch

Main Ingredients

  • 1 teaspoon sesame oil
  • 1 pound lean ground beef
  • 1/4 cup green onions, chopped
  • 1 red bell pepper, chopped
  • 1/2 cup matchstick cut or shredded carrots
  • Salt & pepper to taste

Garnishes

  • Hoisin sauce
  • Sriracha
  • Sesame seeds
  • Green onions

Instructions

  1. Prepare the Teriyaki Sauce: In a small bowl, whisk together brown sugar, fresh grated ginger, garlic powder, Mirin, soy sauce, rice wine vinegar, beef broth, and cornstarch until smooth. Set aside to use later.
  2. Cook the Ground Beef: Heat sesame oil in a medium skillet over medium heat. Add the lean ground beef and cook, breaking it up with a spatula, until no longer pink. Drain any excess grease from the skillet.
  3. Add Vegetables: Stir in the chopped green onions, red bell pepper, and carrots into the skillet with the beef. Cook for 2 to 3 minutes until the vegetables become tender-crisp.
  4. Combine and Thicken Sauce: Pour the prepared teriyaki sauce into the skillet with the beef and veggies. Cook for another 3 minutes, stirring occasionally, allowing the sauce to thicken and coat the ingredients well.
  5. Season and Serve: Season the mixture with salt and pepper to taste. Serve the teriyaki beef and vegetables over cooked rice and garnish with hoisin sauce, sriracha, additional sesame seeds, and green onions as desired.

Notes

  • Mirin is a sweet rice wine used in Japanese cooking; substitute with a mixture of 1 tablespoon sugar dissolved in 2 tablespoons dry sherry or white wine if unavailable.
  • Adjust the amount of sriracha to control the spiciness level in your bowl.
  • For a gluten-free version, use tamari or a gluten-free soy sauce alternative.
  • Leftover teriyaki beef mixture can be stored in an airtight container in the refrigerator for up to 3 days.
