For the Pancakes
- 1 cup (120g) Bisquick or Pancake Mix
- 1 scoop (31g) Vanilla PEScience Select Protein Powder
- 3/4 cup (180g) Skim Milk or your choice of milk
- 1 tsp Maple Extract (optional)

- Prepare the pancake batter: In a mixing bowl, combine the Bisquick or pancake mix with the vanilla protein powder. Stir well before gradually adding the milk and maple extract. Mix until you have a smooth batter with no dry lumps.
- Cook the mini pancakes: Heat a large skillet or griddle over medium heat and lightly grease with cooking spray. Pour approximately 2 tablespoons of batter per pancake onto the hot surface, forming 8 small circles. You may need to cook them in batches. Cook until the bottoms are golden brown, then flip and cook the other side for an additional 60 to 90 seconds. Remove pancakes and set aside.
- Cook the folded eggs: Whisk a single egg in a small bowl. Heat a pan over medium-low heat and spray with cooking spray. Pour in the whisked egg, swirling the pan to create an even layer. Once the edges start to cook, about 10 to 15 seconds, use a rubber spatula to fold one half of the egg toward the center, then fold the other half over it to create a rectangle. Fold the ends into the center to form a neat square shape. Repeat with the remaining eggs. To save time, cook two eggs simultaneously and slice them in half.
