Ingredients

Scale

Fruits and Cheese

  • 2 Peaches, peeled and sliced
  • 4 Slices White Cheddar Cheese (add more if desired)
  • 24 Tablespoons Ricotta Cheese (optional)

Bread and Spreads

  • 4 Slices Sourdough Bread (or Challah, Multigrain, or thick white bread)
  • 1 Tablespoon Honey
  • 2 Tablespoons Butter

Additional Toppings

  • 4 Slices Crispy Bacon
  • Fresh Basil leaves
  • Balsamic Glaze for drizzling

Instructions

  1. Prepare the Peaches: Peel and slice the peaches into thin slices. Set aside for assembling the sandwich.
  2. Assemble the Sandwich: Spread ricotta cheese evenly over one side of each bread slice if using. On one slice, layer the sliced peaches and drizzle with honey. On the other slice, add the white cheddar cheese slices.
  3. Add Butter and Cook: Spread butter generously on the outside of each bread slice. Heat a panini press or skillet over medium-low heat. Place the sandwich in the press or skillet and cook until the bread is golden brown and the cheese is melted. If the bread browns too quickly, lower the heat to avoid burning.
  4. Add Bacon, Basil, and Glaze: If using optional ingredients, open the sandwich once the cheese is melted and place crispy bacon slices, fresh basil leaves, and drizzle with balsamic glaze on top of the melted cheese. Close the sandwich.
  5. Serve Warm: Remove the sandwich from the heat and serve immediately for the best taste and texture.

Notes

  • Use ripe but firm peaches to avoid mushy texture.
  • Ricotta cheese is optional but adds creaminess and a nice contrast to the sweet peaches.
  • Adjust honey quantity based on your sweetness preference.
  • Substitute sourdough with Challah, Multigrain, or thick white bread for different textures and flavors.
  • For a vegetarian version, omit the bacon.
  • Use a panini press for evenly cooked sandwiches or a skillet with a weight on top.
  • Balsamic glaze can be replaced with a reduction of balsamic vinegar if unavailable.
