Ingredients

Scale

Lavender Syrup

  • 1 tablespoon dried culinary lavender
  • 1/4 cup honey or simple syrup (use more to taste)
  • 1/2 cup water
  • 1/2 to 1 teaspoon rosewater (to taste)

Mocktail

  • 4 tablespoons (2 servings) fresh lemon juice
  • 1216 ounces (2 servings) cold sparkling water or club soda
  • Ice cubes (preferably clear for presentation)
  • Optional: a splash of unsweetened cranberry or pomegranate juice or a drop of natural purple food coloring for color
  • Garnishes: lemon wheel, edible dried rose petals, or a sprig of fresh lavender or rosemary

Instructions

  1. Make the lavender syrup: In a small saucepan, combine 1/2 cup water and 1/4 cup honey or sugar. Warm over low heat, stirring until dissolved. Remove from heat, add 1 tablespoon dried lavender, and steep for 10–15 minutes. Strain through a fine mesh sieve and let cool completely.
  2. Add a whisper of rose: Stir 1/2 teaspoon rosewater into the cooled lavender syrup. Taste and, if desired, add up to an additional 1/2 teaspoon, as rosewater flavor intensifies quickly.
  3. Prep your glass: Fill chilled highball or stemless wine glasses with ice cubes. For a soft, moonlit hue, add a small splash of cranberry juice or a drop of natural purple food coloring to the glass.
  4. Build the drink: Pour 1 to 1.5 ounces of the lavender-rose syrup into each glass, followed by 2 tablespoons of fresh lemon juice.
  5. Top with bubbles: Gently pour 6 to 8 ounces of cold sparkling water or club soda into each glass. Stir lightly once or twice to combine without losing carbonation.
  6. Garnish and serve: Add a lemon wheel and a pinch of edible rose petals or a sprig of fresh lavender or rosemary for an elegant finish. Sip and adjust sweetness or citrus according to taste.

Notes

  • Use clear ice cubes for a more visually appealing presentation.
  • Adjust rosewater and honey quantities based on personal flavor preference.
  • The mocktail can be prepared ahead by making the lavender syrup in advance and refrigerating it.
  • Optional splash of cranberry or pomegranate juice adds a lovely tint and slight tartness.
  • This mocktail is best served immediately after preparation to enjoy the sparkle and freshness.
