Vegetables and Herbs

  • 2 broccoli crowns, chopped
  • 1 cup grape tomatoes
  • 1/4 cup sun-dried tomatoes
  • A pinch of crushed red pepper flakes
  • 1/2 tsp dried oregano

  • 1/2 cup half and half
  • 1/4 cup shredded parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Heat oil: In a large skillet, add 1 1/2 tablespoons of extra virgin olive oil and heat it over medium-high heat until shimmering.
  2. Season and cook chicken: Season the chicken pieces with 1 1/2 tsp Creole seasoning, 1/2 tsp onion powder, and 3/4 tsp garlic powder. Add the seasoned chicken to the skillet and sauté for about 10 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.
  3. Add vegetables and spices: Add the chopped broccoli crowns, grape tomatoes, a pinch of crushed red pepper flakes, 1/2 tsp dried oregano, and sun-dried tomatoes to the skillet. Stir well and cook for an additional 10 minutes, stirring occasionally, until the vegetables are tender but still crisp.
  4. Add cream: Stir in 1/2 cup half and half, mixing it thoroughly with the chicken and vegetables, creating a creamy sauce.
  5. Add cheese and finish: Sprinkle 1/4 cup shredded parmesan and 1 cup shredded mozzarella cheese evenly over the top. Allow the cheese to melt on top, then remove from heat and serve immediately.
