Instructions

  1. Prepare the Mushroom Duxelles. In a pan over medium heat, sauté finely chopped mushrooms with olive oil or butter until the moisture evaporates and they become golden and flavorful. Season with salt and pepper, then set aside to cool.
  2. Coat the Beef Cubes. Brush each piece of beef tenderloin lightly with Dijon mustard to enhance flavor and help the pastry stick.
  3. Assemble the Wellington Bites. Roll out the puff pastry sheet and cut into squares large enough to wrap each beef cube. Place a spoonful of mushroom mixture on each pastry square, then the mustard-coated beef cube on top. Fold the pastry around the beef, sealing the edges to form a neat parcel.
  4. Bake Until Golden. Preheat the oven to 400°F (204°C). Place the wrapped beef bites on a baking sheet lined with parchment paper. Bake for about 15-20 minutes, or until the pastry is puffed and golden brown and the beef is cooked to your desired doneness.
