Main Ingredients
- 1/2 cup peanut butter
- 1/4 cup coconut oil (liquid)
- 1/4 cup coconut sugar
- 1/2 cup dark chocolate chips or semi-sweet chocolate chips
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 3/4 cup oats
- 2 tbsp chia seeds
- Pink sprinkles for topping (optional)
- Melting peanut butter and oil: In a small pot, gently melt together the peanut butter and coconut oil, stirring continuously until the mixture is smooth. Add the coconut sugar and continue stirring until it dissolves completely. Make sure the mixture is just about to reach a boil but do not let it boil.
- Incorporate chocolate and flavorings: Remove the pot from heat and immediately add the chocolate chips. Stir until the chocolate melts fully and blends into a smooth mixture. Add vanilla extract and salt, then stir again to combine all the flavors.
- Mix oats and chia seeds: Add the oats and chia seeds to the pot. Stir thoroughly to ensure all the dry ingredients are fully coated by the chocolate and peanut butter mixture. Let the mixture rest for 20 minutes to thicken and hydrate the chia seeds.
- Form the cookies: Line a baking sheet with parchment paper or a silicone baking mat. Using a heart-shaped cookie cutter, scoop 2-3 tablespoons of the mixture into the cutter placed on the sheet. Press down gently to flatten with the back of a spoon, then carefully remove the cutter. Repeat this process until all the mixture is used. Optionally, sprinkle pink sprinkles on top for a festive look.
- Chill to set: Place the baking sheet with the shaped cookies into the freezer. Let them chill and solidify completely for about 20 minutes before serving. This will ensure they hold their shape and have a pleasant texture.
