Instructions

  1. Preheat and prepare flour coating: Heat your oven to 220°C (200°C fan/gas mark 7). In a bowl, tip in the plain flour and season it lightly with salt and pepper. Turn each cod fillet in the seasoned flour to coat evenly on all sides.
  2. Pan fry the cod: Heat half of the olive oil in a non-stick frying pan over medium-high heat. Add the floured cod fillets and fry each side for about 2 minutes or until golden brown. This step helps develop a light crust and locks in moisture.
  3. Arrange for baking: Transfer the browned cod fillets to a roasting tin. Arrange lemon slices and sprigs of thyme on and around the fish. Drizzle the remaining olive oil over the fillets and herbs to add flavor and moisture during baking.
  4. Bake to finish: Place the roasting tin in the preheated oven and bake for 10 minutes or until the cod is cooked through, opaque, and flakes easily with a fork.
