Chocolate Pudding Layer

  • 1/2 cup Cool Whip

Raspberry Cream Cheese Layer

  • 8 ounces cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberries (fresh or frozen)
  • 2 tablespoons milk
  • 1 cup Cool Whip

Topping

  • Remaining Cool Whip (approximately 1/2 cup) for topping and decoration

Instructions

  1. Prepare Crust: Crush the Oreo cookies until finely ground, then combine with melted butter. Press this mixture firmly into the bottom of an 8×8 inch Pyrex dish. Freeze for 10 minutes to set the crust.
  2. Make Chocolate Pudding Layer: Prepare the chocolate pudding according to package directions using half the recommended amount of milk (about 1/2 cup). Fold in 1/2 cup of Cool Whip until smooth and creamy. Spread this mixture evenly over the chilled Oreo crust. Place back in the freezer for 10-15 minutes to firm up.
  3. Prepare Raspberry Layer: In a bowl, beat softened cream cheese, sugar, 2 tablespoons milk, and vanilla extract until smooth. Gently fold in raspberries and 1 cup Cool Whip, combining thoroughly. Spread this raspberry cream cheese mixture over the chocolate pudding layer evenly.
  4. Add Topping: Top the raspberry layer with the remaining Cool Whip, spreading it evenly. Decorate as desired with additional raspberries or crushed Oreo crumbs for visual appeal.
  5. Chill Dessert: Refrigerate the assembled dessert for at least 4 hours, allowing all layers to set and flavors to meld before serving.
