Crust
- 20–25 Oreo cookies, crushed
- 6 tablespoons butter, melted
Chocolate Pudding Layer
- 1 package chocolate pudding mix
- 1 cup milk (use 1/2 cup for pudding, 2 tablespoons for raspberry layer)
- 1/2 cup Cool Whip
Raspberry Cream Cheese Layer
- 8 ounces cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 cup raspberries (fresh or frozen)
- 2 tablespoons milk
- 1 cup Cool Whip
Topping
- Remaining Cool Whip (approximately 1/2 cup) for topping and decoration
- Prepare Crust: Crush the Oreo cookies until finely ground, then combine with melted butter. Press this mixture firmly into the bottom of an 8×8 inch Pyrex dish. Freeze for 10 minutes to set the crust.
- Make Chocolate Pudding Layer: Prepare the chocolate pudding according to package directions using half the recommended amount of milk (about 1/2 cup). Fold in 1/2 cup of Cool Whip until smooth and creamy. Spread this mixture evenly over the chilled Oreo crust. Place back in the freezer for 10-15 minutes to firm up.
- Prepare Raspberry Layer: In a bowl, beat softened cream cheese, sugar, 2 tablespoons milk, and vanilla extract until smooth. Gently fold in raspberries and 1 cup Cool Whip, combining thoroughly. Spread this raspberry cream cheese mixture over the chocolate pudding layer evenly.
- Add Topping: Top the raspberry layer with the remaining Cool Whip, spreading it evenly. Decorate as desired with additional raspberries or crushed Oreo crumbs for visual appeal.
- Chill Dessert: Refrigerate the assembled dessert for at least 4 hours, allowing all layers to set and flavors to meld before serving.
Notes
- Use either fresh or frozen raspberries for this recipe; if using frozen, thaw and drain excess liquid.
- For best results, chill each layer before adding the next to maintain defined layers.
- This dessert is best served chilled and consumed within 2-3 days.
- Feel free to decorate the top with extra crushed Oreos or fresh raspberries for presentation.
- To make it gluten-free, substitute gluten-free chocolate sandwich cookies for Oreos.
