Ingredients

Scale

Chocolate Eyes

  • 2 ounces dark cocoa candy melts

Rice Krispie Treat Ghosts

  • 7 cups Rice Krispies Cereal
  • 6 tablespoons salted butter
  • 16 ounces mini marshmallows
  • 6 ounces white candy melts or white chocolate chips

Instructions

  1. Melt Candy Melts: Melt the dark cocoa candy melts in the microwave using 30-second bursts on high power, stirring after each burst until fully melted and smooth.
  2. Pipe Eyes: Pour the melted chocolate into a small zip-top bag and snip off a tip. Pipe 24 small teardrop-shaped eyes onto a parchment paper-lined baking sheet.
  3. Chill Eyes: Freeze the piped chocolate eyes for about 3 minutes until they harden. Remove and set aside at room temperature until needed.
  4. Prepare Bowl and Cereal: Spray a large mixing bowl with baking spray to prevent sticking and pour in the Rice Krispies Cereal. Set aside.
  5. Melt Butter and Marshmallows: Cut butter into small pieces and place it in a medium-large saucepan over low heat. Add marshmallows and white chocolate to the pan.
  6. Heat and Stir Mixture: Stir frequently as the marshmallows and white chocolate melt. When about 75% melted, remove the pan from heat and stir vigorously until completely smooth.
  7. Combine with Cereal: Pour the melted marshmallow mixture over the Rice Krispies cereal. Stir thoroughly until all cereal is evenly coated.
  8. Cool Mixture: Allow the mixture to cool for a few minutes until it is cool enough to handle safely.
  9. Shape Ghosts: Pinch off twelve portions, each approximately 1/2 cup, and roll them into balls. Then shape each ball into a cone, pinching the top to form points and curving the points to resemble ghosts.
  10. Attach Eyes: Press two chocolate eyes onto each shaped ghost. They should stick naturally; if not, attach the eyes using a small amount of the remaining melted candy melts.
  11. Dry: Let the ghosts dry at room temperature for about an hour to set before packaging them in bags or boxes for storage or gifting.

Notes

  • If the candy melts are too thick, add a small amount of vegetable oil to thin for easier piping.
  • Ensure marshmallow mixture is not too hot when shaping to avoid burns.
  • For best shape retention, don’t handle the treats too much once formed.
  • Store in an airtight container at room temperature for up to 3 days to maintain freshness.
  • Use parchment paper to prevent sticking while working with melted chocolate and shaping treats.
