For the Base of the Casserole
- 1 small to medium head cauliflower, broken into small pieces
- 1 tbsp olive oil
- ¼ tsp salt
- 1 tsp garlic powder
For the Spicy Cheese Sauce
- 4 oz Ranch salad or Blue Cheese salad dressing
- 3–4 oz cheese of choice (cheddar, brie, gouda, mozzarella, etc.)
- 4 oz cream cheese
- 1–3 tablespoons hot sauce
- 1 tsp garlic powder
For the Topping
- ¼ – ½ cup shredded mozzarella or cheddar cheese
- OPTIONAL – sliced green onion, bacon bits
- Preheat Oven and Prepare Pan: Preheat your oven to 450°F (232°C). Grease a cast-iron skillet or an 8 x 8 inch baking pan with cooking spray and set it aside to keep it ready for roasting the cauliflower.
- Roast Cauliflower: Toss the cauliflower florets in olive oil, garlic powder, and salt until well coated. Spread the cauliflower evenly in the prepared skillet or baking pan. Bake for 10 minutes, stirring once halfway through at the 5-minute mark. If you prefer softer cauliflower, bake for an additional 2 to 5 minutes.
- Prepare Spicy Cheese Sauce: While the cauliflower roasts, combine the Ranch or Blue Cheese dressing, your choice of cheese, and cream cheese in a small microwave-safe bowl. Microwave for about 30 seconds or until the cheese starts to melt. Remove and stir in the hot sauce and garlic powder until fully incorporated.
- Combine Cauliflower and Sauce: Remove the roasted cauliflower from the oven and carefully pour the spicy cheese sauce over it. Stir gently to combine, but be cautious as the mixture will be very hot.
- Top and Bake Again: Sprinkle the shredded mozzarella or cheddar cheese evenly over the sauced cauliflower. Optionally add sliced green onions or bacon bits. Return the pan to the oven and bake for an additional 10 minutes for crunchier cauliflower or up to 15 minutes if you prefer it softer and more tender.
