This Savory Chicken Cobbler is a comforting, hearty dish featuring tender shredded chicken and mixed vegetables in a flavorful broth, topped with a golden, buttery biscuit crust. Perfect for a satisfying family dinner, it combines classic chicken pot pie flavors with the ease of a one-dish meal baked to perfection.

Ingredients

Scale

Chicken Mixture

  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup chicken broth
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Biscuit Topping

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • ¾ cup milk

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish with cooking spray or butter to prevent sticking.
  2. Prepare Chicken Mixture: In a large bowl, combine shredded chicken, frozen mixed vegetables, chicken broth, 1 cup of milk, garlic powder, onion powder, dried thyme, salt, and black pepper. Stir thoroughly to ensure even distribution of seasonings. Pour this mixture into the greased baking dish.
  3. Make Biscuit Batter: In a separate bowl, whisk together flour, baking powder, and ½ teaspoon salt. Add melted butter and ¾ cup milk, stirring gently until just combined; the batter should be thick but scoopable.
  4. Assemble Cobbler: Drop spoonfuls of the biscuit batter evenly over the chicken and vegetable mixture in the baking dish, trying to cover as much surface as possible without smoothing it out.
  5. Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the biscuit crust is golden brown and a toothpick inserted into the batter comes out clean.
  6. Cool and Serve: Allow the cobbler to cool for about 5 minutes before serving, so the filling sets slightly and is easier to serve.

Notes

  • Use cooked chicken from rotisserie or leftover roasted chicken for convenience.
  • Frozen mixed vegetables can be substituted with fresh vegetables finely chopped if preferred.
  • For a richer biscuit topping, you may replace some of the milk with buttermilk.
  • To add extra flavor, sprinkle shredded cheese over the chicken mixture before adding the biscuit topping.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the oven.
