Instructions

  1. Boil Water and Prepare Poaching Rims: Bring a pot of water to a boil, using enough water to cover the eggs fully when placed at the bottom. Drop the metal outer rims of two mason jar lids into the pot so they lay flat on the bottom.
  2. Poach the Eggs: Once the water is boiling, turn off the heat. Carefully crack each egg directly into a mason jar lid rim. Cover the pot and let the eggs poach for 5 minutes for semi-soft yolks; adjust time to 4 minutes for very soft or 4:30 minutes for soft yolks.
  3. Toast Bread and Prepare Avocado: While the eggs cook, toast the whole grain bread slices to desired crispness. Smash 1/3 avocado evenly on each piece of toast.
  4. Remove Eggs and Assemble: Use a spatula to gently lift the poached eggs out of the water. Carefully pull the mason jar rim off the eggs while holding them over the pot to avoid breaking. Place the poached eggs on top of the avocado-topped toast slices.
  5. Add Toppings and Serve: Sprinkle the eggs and toast with shaved Parmesan cheese, season with salt and pepper, and garnish with fresh herbs. Serve immediately alongside quartered heirloom tomatoes for a fresh and vibrant meal.
