Instructions

  1. Prepare the dough: In a large bowl, combine the sourdough starter, flour, warm water, olive oil, and salt. Mix thoroughly until all ingredients are incorporated and a sticky dough forms.
  2. Stretch the dough: Transfer the dough to a well-oiled baking pan. Using your hands, gently stretch and press the dough to fill the pan evenly, creating dimples with your fingertips for texture.
  3. First rise: Cover the dough loosely with a towel or plastic wrap and let it rest at room temperature for 3 to 4 hours until it has puffed up noticeably.
  4. Preheat oven: Preheat your oven to 450°F (230°C) while the dough is resting.
  5. Bake until golden: Drizzle additional olive oil over the dough and sprinkle coarse sea salt on top if desired. Place the pan in the preheated oven and bake for 20 to 25 minutes, or until the focaccia is golden brown and crispy on the edges.
