Dry Ingredients
- 1 cup old-fashioned rolled oats or gluten-free oats
- 1/3 cup finely crushed graham crackers (can use gluten-free)
- 2 tablespoons chia seeds
- A pinch of sea salt
Wet Ingredients
- 1/2 cup creamy peanut butter (can use almond butter)
- 1/4 cup honey
- 1/2 teaspoon vanilla extract
Add-ins
- 1/4 cup mini chocolate chips
- 1/4 cup Mallow Bits
- Mix Dry Ingredients. In a large bowl, combine the rolled oats, finely crushed graham crackers, chia seeds, and a pinch of sea salt. Stir them together to ensure an even distribution.
- Add Wet Ingredients. Add the creamy peanut butter, honey, and vanilla extract to the dry ingredients. Stir thoroughly until the mixture is well combined and has a moist, sticky texture that holds together.
- Incorporate Add-ins. Gently fold in the mini chocolate chips and Mallow Bits to distribute them evenly throughout the mixture without crushing them.
- Form Energy Bites. Using about 1 to 2 tablespoons of the mixture per bite, roll the mixture into small balls using your hands. This size makes them easy to snack on and ensures each bite is packed with flavor.
- Refrigerate and Store. Place the formed energy bites in an airtight container and refrigerate. Store them in the fridge for up to 2 weeks to maintain freshness and texture.
