This Snickerdoodle Cobbler is a delightful twist on the classic cookie flavor, combining a cinnamon-spiced batter with a buttery, sweet topping and a luscious syrupy layer created during baking. Perfectly warm and comforting, this dessert is ideal for cozy gatherings or as a sweet treat after dinner, especially when served with vanilla ice cream.

Ingredients

Scale

Batter Ingredients

  • ⅓ cup unsalted butter, melted
  • ¾ cup whole milk
  • 2 teaspoons vanilla extract
  • 1 ½ cups sugar
  • 1 ½ cups all-purpose flour
  • 2 ¼ teaspoons baking powder
  • ¾ teaspoon salt
  • 2 teaspoons cinnamon

Topping Ingredients

  • 1 ½ cups brown sugar, packed
  • 1 ½ cups hot water
  • ¼ cup sugar
  • ½ teaspoon cinnamon

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and prepare a 9×13-inch baking pan by pouring the melted butter into it, spreading evenly to cover the bottom.
  2. Prepare the batter: In a large mixing bowl, whisk together the milk, vanilla extract, and 1 ½ cups sugar. Gradually add the all-purpose flour, baking powder, salt, and 2 teaspoons cinnamon, whisking just until combined to avoid overmixing.
  3. Assemble the cobbler: Carefully spoon the batter evenly over the melted butter in the pan without mixing. Sprinkle the brown sugar evenly over the batter. Slowly pour the hot water over the entire surface; do not stir the layers.
  4. Bake: Place the cobbler in the preheated oven and bake for 30-35 minutes. The top should turn golden brown and mostly set, with a bubbly syrup underlying.
  5. Add the topping: Mix the remaining ¼ cup sugar and ½ teaspoon cinnamon in a small bowl. When the cobbler comes out of the oven, sprinkle this cinnamon sugar mixture evenly over the top.
  6. Cool and serve: Allow the cobbler to cool slightly so the flavors settle. Serve warm, ideally with a scoop of vanilla ice cream to complement the warm cinnamon notes.

Notes

  • Do not stir after adding the hot water; this helps create the cobbler’s unique texture with syrup underneath and cakey top.
  • For best results, use fresh cinnamon for a vibrant flavor.
  • Serving with vanilla ice cream enhances the dessert’s warmth and sweetness contrast.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat before serving.
