Parsley-Garlic Sauce
- 2 cloves garlic, roughly chopped
- 2 tablespoons chopped parsley (8 grams)
- Pinch sea salt

For Frying Eggs
- 4 cage-free organic eggs
- 4 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil (60 ml)

- Make the Parsley-Garlic Sauce: Add 2 cloves of roughly chopped garlic, a pinch of sea salt, and 2 tablespoons of chopped parsley into a mortar. Pound the mixture with a pestle until a rough paste forms. Drizzle in 2 tablespoons (30 ml) of extra virgin olive oil and mix until combined. Set the sauce aside to let the flavors meld.
- Heat the Olive Oil: Place a small to medium-sized frying pan over medium heat. Add 1/4 cup (60 ml) of extra virgin olive oil to the pan and heat until the oil is hot but not smoking, creating the perfect base for sautéing the garlic and frying the eggs.
- Prepare Garlic & Eggs: While the oil warms, thinly slice the remaining 4 cloves of garlic. Crack the 4 eggs into small bowls, preferably dividing them so two eggs are in each bowl to make adding them quickly to the pan easier and more controlled.
- Sauté Garlic & Fry First Eggs: Add half of the sliced garlic to the hot oil and stir for 30 to 45 seconds, until the garlic starts turning golden and fragrant. Immediately add 2 eggs to the pan, spooning some sautéed garlic slices over the eggs. Let fry undisturbed until the bottoms are crisp and golden, about 1 to 2 minutes.
- Finish & Repeat: Carefully spoon some of the hot olive oil over the whites of the eggs for a few seconds to help finish cooking them evenly. When the eggs are set, remove them along with the garlic slices from the pan, letting any excess oil drip off. Repeat this sauté and frying process with the remaining 2 eggs and garlic.
