Dry Ingredients

  • 240 g Special K (or any rice-based cereal flakes)
  • 60 g walnuts (finely chopped)
  • 1 tbsp bouillon powder
  • 85 g sage and onion stuffing mix

Wet Ingredients

  • 6 medium free-range eggs (beaten)
  • 350 g cottage cheese
  • 80 g salted butter (melted)

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (160°C fan / 320°F) to ensure it’s at the right temperature for baking your roast.
  2. Prepare the Tin: Grease and line a 1lb loaf tin (or cake tin) with baking paper to prevent sticking and ease removal.
  3. Crush Special K: Crush the Special K cereal to a rough crumb using your hands in a bowl or by placing it in a ziplock bag and bashing it with a rolling pin. Avoid pulverizing it into powder to keep the roast light.
  4. Mix Dry Ingredients: In a bowl, combine the crushed Special K, finely chopped walnuts, bouillon powder, and sage and onion stuffing mix. Stir together to distribute evenly.
  5. Add Wet Ingredients: Add the cottage cheese and melted butter to the dry mix, stirring thoroughly to combine all ingredients well.
  6. Incorporate Eggs: Pour in the beaten eggs and stir the mixture thoroughly, ensuring the eggs are evenly incorporated for proper binding.
  7. Transfer to Tin: Pour the prepared mixture into the lined loaf tin, spreading it evenly for uniform baking.
  8. First Bake: Cover the top of the loaf tin with foil to prevent over-browning and bake in the preheated oven for 30 minutes.
  9. Finish Baking: Remove the foil and bake for a further 45 minutes until the roast is firm and golden on top.
  10. Serve: Turn the roast out onto a serving board, slice it, and serve warm.

Notes

  • Don’t crush the Special K cereal too finely to avoid a dense roast.
  • You can use any rice-based cereal flakes as a substitute for Special K if needed.
  • Using a loaf tin shapes the roast neatly, but a cake tin can be used as an alternative.
