Instructions

  1. Blend base: In a bowl, combine ½ pound strawberries, 1 cup Greek yogurt, ½ cup milk, 3 tablespoons maple syrup (or honey), and 1 teaspoon vanilla extract. Use an immersion blender to blend the mixture until smooth and creamy. Alternatively, blend in a regular blender and then transfer to a bowl.
  2. Add chia seeds and whisk: Add 4 tablespoons of chia seeds to the blended mixture. Whisk vigorously for about 30 seconds to prevent clumps of chia seeds and ensure even distribution.
  3. Refrigerate to thicken: Cover the bowl or divide the mixture into individual jars. Refrigerate for at least 2 hours or overnight until the pudding thickens to a creamy consistency.
