Instructions

  1. Prepare the chicken: Pat the chicken breasts dry with paper towels. Using a sharp knife, carefully cut a pocket into the side of each breast without cutting all the way through.
  2. Stuff the chicken: Season the inside and outside of each chicken breast with salt and pepper. Stuff each pocket with several slices of apple and brie cheese. Secure with toothpicks if necessary to keep the filling inside.
  3. Preheat the oven: Set your oven to 375°F (190°C) and allow it to fully preheat.
  4. Sear the chicken: Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear for 2-3 minutes on each side until golden brown.
  5. Bake the chicken: Transfer the skillet to the preheated oven and bake the chicken breasts for 20-25 minutes or until the internal temperature reaches 165°F (74°C), ensuring they are fully cooked and juicy.
  6. Rest and serve: Remove the chicken from the oven and let it rest for 5 minutes before removing toothpicks and slicing. Garnish with fresh thyme or rosemary if desired and serve warm.
